It's not exactly independence day, more the celebration of the first congressional meeting or something, but it's darn festive, and somewhat soaked in alchohol, as I wrote here: http://matadornights.com/chile-gears-up-for-its-alcohol-infused-national-holiday. The festivities are practically underway already, and from here on out it's all cuecas and chicha.
